Dang Rico you beat me to Dragon's Lair!  I used to ride my bike for miles as a twelve year old with my pockets stuffed full of quarters to get to the mall to play and watch that game.  Dragon's Lair was probably the first game that was as fun or more fun to watch than it was to play.

So anyway, my top three are hard to narrow down, so as I always do in these situations, I am going to cheat:

1.  Dragon's Lair/Space Ace/Dragon's Lair 2: Time Warp

2.  Donkey Kong/Donkey Kong Jr.

3.  Star Wars (the original)/Star Trek

I know number three is a stretch but I included them together because they are both vector graphics based space shooting games with similar mechanics.  Star Trek is the bit more complicated of the two, with a complex control scheme that included a spinner to turn the ship, and multiple buttons to access photon torpedos, warp speed, and phasers.  The voices in that game were so cool though, with Spock and Scotty lending their talents to the game making it easy to let your imagination soar as you play.  Both Star Trek and Star Wars are about 1000 times better if you played them in the sit down cockpit versions instead of the standup traditional arcade units.
