Podcasters, what do you use to record interviews

Ok, for the most part, I think most of us use Skype to do our podcast interviews with. But are there any other programs that anyone uses? I love Skype really, but it has this bad issue with audio cut out, especially when people talk at the same time. Not a biggie, but I was just wondering if there was some other program that works?

I've only been doing this for a very short while, but I use Skype and the call recorder plugin.  Then I run the recording through Levelator, to level everyone's voices.  I didn't use that the first time, and I wound up cutting the voices into different tracks and tried leveling them manually.  It was intense and terrible. 

I know it's also popular to have each person record their own audio, and one person will sync them together. 

As long as no one's fighting, I think the "talk over" problem isn't a huge issue, and sometimes can even be avoided or cut out if you each repeat what you were trying to say, not at the same time.  ;)
