Living in this apartment is of course making me cook more often, although I do enjoy Chinese food out and the quickie frozen dinner. So, from time to time I thought I'd post what I'm cooking. One of my favorite things to both cook and eat is chili. I tend to like it spicy. So here is the batch I just tossed together a few minutes ago. I have no real recipe and vary it each time. Usually with some kind of meat, beans, various tomatoes, peppers, etc. Mmmm, smells so good!

Just had a big bowl - just about perfect. Spicy enough, but tasty too. Got enough left for 2-3 more meals too! One of the best parts of making a big pot of something.

Great thread! I am going to start posting some of my creations here as well! I'm just roasting some chicken breasts tonight with 2 baked sweet potatoes and fruit for dessert tonight, but when we do something good. I'll post it here. :)
Made some spaghetti tonight and had a salad too. Been awhile since I had a nice plate of pasta. Delicious! :wub

That's usually how I am. I'm usually to busy do any serious cooking, but I took a cooking class in high school and I try to do it every once and a while just to prove to myself I still can.
Just saw the pasta dish! If I can make a suggestion (my Italian-ness is coming out now)
When you finish cooking the pasta, drain it (don't rinse it!), then put a few spoonfuls (or one big serving spoonful) of sauce back into the pot. Throw the drained pasta back into the pot and toss it in the sauce. This will get all the pasta coated in a small amount of sauce and stop it from clumping together. That's what my nonna taught me anyways :)
The pad thai looks awesome too! I know when Fran isn't around I find it hard to cook just for myself.

LOL! I was thinking the same thing. My grandmother is Italian and it's always been second nature to do my sauces in a sauce pan and toss the al dente pasta in. Where I used to drain it first, now I just pull it from the water with tongs and fold it into the sauce as I go.
I think cooking is one of my top 5 joys. When I go all out on my pasta, I like to do everything from pasta to sauce from scratch. It's a longer process on the front end, but I think the love comes out in the dish.

Lynn usually does most of the cooking (holiday meals included). I'm the BBQ guy and that kind of thing. But being over here I've had to fend for myself, obviously.
