Download Helper (for grabbing Youtube and other video clips) and Web Mail Notifier to monitor and manage multiple email accounts.  Cool Iris (makes viewing online images sort of 3-D) and Download Status Bar to monitor downloads.  I use FireFTP too sometimes, but mainly I use Filezilla for FTP stuff.

Foxclocks (friends all over the world, makes it easier to catch them at the right time)
Foxforecast
Twitterfox
Coloured Tabs (this is fun)
Stumble Upon

I did have ScribeFire plug in but after the recent update it started freezing on me too much and I got fed up with it.

Rico - there's a programme called 'POP Peeper' that you can use to check all your various e-mail accounts from your desktop (a little notice pops up or you give it a sound)

I'll check out POP Peeper but I was trying to avoid running another program - especially since I have Firefox open all day anyway.

Mine are a bit more esoteric.

Firebug - javascript error console, tracks and reports ajax calls, etc etc etc
FlagFox - Displays a flag depicting the location of each server
Fusebox 5 Reload - Reloads the current Fusebox application via right-click or tools menu
MeausreIt - Draw out a ruler to get the pixel width and height of any elements on a webpage
Web Developer - Adds a menu and a toolbar with various web developer tools
