You can get educational discounts either online from Apple or in their stores.

UBS has an emloyee purchase program with Apple. I can buy a 32gig iPod Touch for $375, so like 10% off or so.

Unfortunately with Apple products there are rarely any kind of straight up sales. You either have to go the educational route or be part of some other organization that deals with them.
